Sounds delicious! One of my favorite things is to slightly cook the potato in the microwave, slice it into thins, but not all the way through, drizzle with live oil, seasoned salt and LOTS of fresh chopped garlic and wrap in foil and cook it ont he grill or in the fire pit. The crusty bottom is awessssome

Me too...the potato is one of my favorite comfort foods.

This recipe sounds great, however what do you do with the red onion? Do you roast it with the potatoes or do you toss it in with everything at the end? I was wondering if I missed something.
